Food Nation: Sri Lankan Cuisine
Sri Lankan Cuisine
Author: Josh DHey food adventurers!
Today we will be talking about the Sri Lankan cuisine. As I am of Sri Lankan ethnicity, the Sri Lankan cuisine has been a big part of my appetite. One dish I especially love is Chicken Biriyani (picture above). The secret ingredient that sets it apart from all other rice-based dishes is the chicken stock. The chicken stock is boiled separately and then mixed into the rice, given it that juicy chicken goodness in every spoonful. The dish will take about 40-50 mins to cook.
To be honest, I can't remember my mum's recipe, however I do have a link to another recipe: https://www.bbcgoodfood.com/recipes/4686/chicken-biryani
Another dish that I love is Kiribath (also known as milk rice, picture below). This is a dish I would eat for breakfast and/or on New Year’s day as a special dish. Similar to how the biryani rice is cooked, you cook the rice in coconut milk, making it stick together (kind of like rice pudding).
