Food Recipe: Burmese Semolina Cake (Sanwinmakin)

Hello everyone!
Today, I'll be sharing a recipe on how to make Sanwinmakin, a type of Burmese dessert that I absolutely love. Sanwinmakin is a Burmese Semolina cake that is often served in a diamond shape. It has Indian origins and it is a bit similar to the Indian Kesari but with the addition of the coconut milk. What I love about this dessert is that while it's not too sweet to consume, it still leaves a sweet flavor in the mouth afterwards. This recipe takes approximately 1 hour and 5 minutes and its serving size is for 10 people.
So let's see how it's done.
Ingredients:
- 1 cup of fine semolina
- 1 cup of brown sugar
- 3 cups of coconut milk (or coconut cream)
- 4 tablespoons of melted unsalted butter
- 4 eggs
- 1 pinch of salt
- ½ teaspoon of ground cardamom
- 2 tablespoons of golden sesame seeds
Instructions:
- Preheat the oven to 320 F.
- In an unstick pan, mix the semolina with the coconut milk by adding coconut milk one cup at a time and stir the mix.
- Add the brown sugar in the semolina and continue stirring until the mixture thickens.
- When the mixture begins to thicken, add the butter and mix well.
- Stop when the dough pulls away from the sides of the pan and add salt, ground cardamom.
- Separate the egg whites from the yolks.
- Stir the yolks in the mixture, one at a time.
- Beat the egg whites until they are stiff and add them into the mixture.
- Pour the mixture into a baking pan and bake for 45 minutes in the preheated oven.
- Afterwards, sprinkle the sesame seeds on top of the baked Sanwinmakin.
- Cut into diamond shapes.
