Food Recipe: Kolak Ubi (Sweet Potato Stewed in Coconut Milk)

'Kolak' Indonesian Sweet Dessert.

Hi Foodies! How are you guys? Back with me again, Gary. This month,  Muslim peoples all around the world are going on a ritual called Fasting. Fasting is an activity where people willing abstinence or reduction from some or all food, drink, or both, for a period of time. They eat at a certain time, usually at 4-5 AM, and will not drink or eat anything until 6 PM. Because of that long interval without liquids or food, at the end of the day, they usually have to consume something sweet first to restore energy. Today, I'll share to you guys a recipe that usually Indonesian people eat at the end of their fasting time. This recipe will serve 4 portions and only take around 30 minutes to make. Let's get cooking!

INGREDIENTS




  • 400gr Sweet Potato
  • 750ml Water
  • 500ml Coconut Milk
  • 300gr Brown Sugar
  • A quarter teaspoon of salt

STEPS


1. Clean the sweet potato from dirt or grime. Peel the outer skin and slice into dice shape


2. Boil the water and put in the sweet potato and the salt. Boil it until half-cooked

3. Put the brown sugar and stir until it it boil



4. After it boil, Put in the coconut milk and stir it again until it boil


5. After it boil, turn off the stove and let stand  until the steam runs off. Put into a bowl and 'Kolak' ready to be consume :D


Protip

1. You can put a sheet or two of Pandan Leaves in the third step to add fragnance.

2. You can add another ingredients such as cassanova, banana, or the fruit of the sugar palm. We usually call it 'Kolang-kaling'.
