Food Recipe: Red Lentil Bean Soup

Hey foodies! I hope everyone has had a great past week unlike me because to be honest, I have been sick with a terrible cold for the entire week. While I was sick in bed, all I could think of was eating one thing: red lentil bean soup. Rather than be watery like any other soup, the red lentil bean soup is chunkier due to the bean. Whenever I was sick, my mom would always make me a fresh cup of warm red lentil bean soup, which would amazingly always take away my sickness. Which is why I'm here to share a short and easy recipe on how to make your own bowl of red lentil bean soup, in case you're sick or you just want a warm bowl of soup to make you warm as the weather is getting colder. This recipe will take approximately an hour to make but it's all worth it! So let's start..

Materials needed:
  • 3/8 cups of red lentils
  • 1/2 cloves of garlic
  • 1/4 ginger
  • 1/4 onion
  • 1/4 potato
  • 1/4 teaspoon of turmeric
  • 1 cup of water
  • 1/4 tablespoon of salt
  • 1/8 teaspoon of pepper
  • Curry leaves
  • olive oil (for frying)
Tip: It's faster if you have soaked the red lentils beforehand for an hour in cold water.

Steps:
  1. Peel and mince the garlic and ginger. 
  2. Peel and dice the onion and potato. 
  3. Add the garlic, ginger, and onion together to a pot, add turmeric, and fry over medium heat with olive oil.
  4. Add the washed red lentils and add it to the pot. 
  5. Fry for approximately 2 minutes or until the yellow color becomes brighter. 
  6. Add water and the diced potatoes. 
  7. When the soup starts to simmer, season with salt and pepper. 
  8. Cook until the potatoes are soft, then top with curry leaves.
Now, the red lentil bean soup is completed! If you would like to have noodles while you eat your soup, you can add glass noodles to the pot as well.
